Wild garlic semolina dumplings

Ingredients for 4 servings:

  • 70 g butter, soft
  • 2 eggs, size L
  • 175 g durum wheat semolina
  • 45 g wild garlic, fresh
  • some salt
  • some pepper
  • some nutmeg, freshly ground
  • 2 liters of broth

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Soup garnish

Finely chop the wild garlic. Mix the softened butter thoroughly. Then combine with the eggs, semolina, wild garlic, salt, pepper, and nutmeg until smooth. Let the mixture rest for about 30 minutes. Bring the broth (vegetable broth for vegetarians) to a boil. Using two tablespoons, scoop out dumplings, shape them, and add them to the boiling broth. Immediately reduce the heat and let it simmer with the lid on for 20 minutes.
