Wild garlic soup

Ingredients for 4 servings:

  • ½ bunch wild garlic, stems removed, chopped
  • 30 g butter
  • 30 g flour
  • 1 liter of milk
  • some cream
  • some white wine
  • White bread, diced, toasted in a little butter
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the flour in butter, pour in the milk, and simmer for a good 10 minutes. Add the chopped wild garlic (reserve some for garnish) and purée the soup. Season with salt, pepper, and sugar. Finish with cream and white wine. Serve sprinkled with chopped wild garlic and white bread cubes.
