Winemaker's soup

Ingredients for 4 servings:

  • 1 kg pork shoulder
  • 2 tbsp lard
  • 1 liter of water
  • Salt
  • pepper
  • ½ tsp thyme
  • 2 bay leaves
  • ½ tsp caraway seeds
  • 4 potatoes, diced
  • 1 carrot(s), diced
  • 1 stalk(s) leek, sliced
  • 1 onion(s), diced
  • 1 piece(s) celery, small, diced
  • 750 ml white wine (Riesling)
  • 1 bunch parsley, chopped

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut the pork shoulder into bite-sized pieces. Heat the lard in a saucepan and brown the meat cubes. Deglaze with 1 liter of water. Add salt, pepper, thyme, bay leaves, and caraway seeds and simmer for 30 minutes. Add the potatoes and remaining vegetables and simmer for another 30 minutes. Now add the Riesling, bring to a boil briefly, and season with salt and pepper. Sprinkle the soup with parsley and serve hot.
