Ingredients for 1 servings:
- 900 g apples, weighed ready for cooking (sour, aromatic e.g. Topaz or Jonagored)
- 100 g candied ginger (unsulphured)
- 250 ml apple juice, organic, naturally cloudy
- 100 ml lemon juice (freshly squeezed from about 3 lemons)
- 1 tsp, sautéed cardamom, ground
- 1 tsp, heaped cinnamon, ground
- 500 g gelling sugar, organic 2:1

Cut the candied ginger into small pieces. In a large saucepan, mix the apple juice and lemon juice. Peel and core the apples, cut them into small pieces, and immediately add them to the pan to prevent the apple cubes from browning. Add the ginger cubes. Bring everything to a boil and simmer for about 10 minutes while stirring. Then add the gelling sugar and spices and let everything boil briskly for another 5 minutes. Do a set test. Pour the hot, finished jam into clean screw-top jars, seal tightly, and turn upside down for about 5 minutes. The specified quantities are sufficient for about 1000g of jam. Tip: If you use organic apple juice and organic gelling sugar, you can be sure that the jam is vegan.
