Winter Dream
The perfect winter dream recipe with a picture and simple step-by-step instructions.
- 300 g Dark chocolate couverture
- Sugar
- Frozen berry mix
- 2 tbsp Strength
- 750 g Mascarpone
- 3 tbsp Speculoos seasoning
- 7 tbsp Sugar
- 200 ml Cream
- Biscuit
- Milk
- Red fruit jelly
- White couverture
- Cut 1,300g dark chocolate couverture into small pieces and heat slowly.
- Caramelize the sugar in the pot until it is golden. Add frozen berries. Deglaze with juice and simmer.
- Mix cold water and starch separately (100ml water with 2 tablespoons starch) and stir until the berries shine again. Simmer.
- Put the couverture on the foil, distribute it (tip: cut the laminating foil to 6x10cm) and fix the “round turrets” with 2 paper clips. Place in the freezer for about 2 hours.
- Stir in the mascarpone, spiced biscuits, sugar and cream (plus milk if necessary).
- Dip the sponge cake in milk and cut out round slices that are right for the shape (tip: also works with a glass).
- Remove the frozen borders from the freezer and apply the layers (with a wet spoon).
- Order 8: sponge cake, mascarpone, red jelly. The whole 2 times. Then put everything in the freezer for 2 hours.
- Take dessert out of the freezer. Carefully peel off the foils and roll them in grated white couverture.
- Put in the refrigerator and serve when they are thawed.
