Ingredients for 3 servings:

  • 1 pork fillet(s)
  • 3 apples (Boskoop)
  • 1 cup of cream
  • 50 ml gravy
  • 3 eggs
  • 4 tbsp flour
  • 2 tbsp honey
  • 2 tsp nutmeg
  • 1 tsp rosemary
  • 3 tbsp sherry
  • 300 g cranberries from the jar
  • 3 cups milk
  • 3 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pork fillet in brown apple and cranberry sauce with pancakes

Cut the fillet into medallions and fry them in olive oil, season with salt and pepper. Then remove from the pan and keep warm in the oven. Wash, core, and dice the apples, leaving the skin on. Fry the apples in the remaining oil until soft, then remove from the pan and deglaze the pan with sherry. Allow to reduce, then add the pan juices and cranberries. Next, add the cream, rosemary, and apples and let the sauce simmer for a few more minutes. Make a pancake batter from the flour, eggs, and milk, season with salt, honey, and nutmeg, and use the batter to make thick flatbreads. Divide the meat and pancakes among the plates and serve with the sauce. If you want to enjoy this dish as a food combining dish, you can simply serve omelets instead of the pancakes.
