Winter radish and potato casserole

Ingredients for 4 servings:

  • 4 large carrots
  • 2 radish(s), black
  • 8 mushrooms
  • 150 g bacon, diced
  • 10 m.-sized potatoes
  • 1 cup of cream
  • 100 ml vegetable stock
  • some basil
  • 100 g cheese (Gouda), grated
  • Fat for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Prepare a baking dish and preheat the oven to 180°C fan/convection oven (200°C top/bottom heat). Finely grate the carrots, radishes, and potatoes, and slice the mushrooms. Layer half each of the carrots, radishes, mushrooms, bacon, and potatoes in the baking dish, then the rest in the same order. Finely chop the basil leaves and sprinkle them over the top layer of potatoes. Mix the vegetable broth with the cream and pour over the potatoes. Sprinkle with grated Gouda cheese. Bake in the preheated oven for approximately 55-60 minutes.
