Ingredients for 6 servings:

  • 1,500 g roast pork (roast ham, possibly wild boar)
  • 1 bunch of soup vegetables
  • ½ liter of beer (dark beer)
  • ½ liter meat broth (stock)
  • 1 m.-sized onion(s)
  • 3 tbsp oil
  • 1 tbsp tomato paste
  • 1 tbsp mustard
  • 1 tbsp honey
  • 2 garlic cloves
  • 1 orange(s)
  • 1 tsp paprika powder
  • ¼ tsp cinnamon
  • 4 cloves
  • 4 juniper berries
  • 4 grains allspice
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim the ham roast, season with pepper, salt, and rub with mustard. Heat the oil and sear the roast all over. Remove the roast from the pan and sauté the finely chopped vegetables and onion. Add the tomato paste and deglaze with the dark beer. Add the garlic, finely chopped orange, honey, and spices, stir, and place the roast on top. Top with the stock and simmer for 1.5 hours. Slice the roast, strain the sauce, and thicken and season to taste.
