Wolffish with sea urchin and coriander

Ingredients for 2 servings:

  • 500 g wolffish fillet(s)
  • 2 sea urchins
  • 1 bunch of coriander
  • 250 g tomato(s) (party tomatoes)
  • 5 olives, black
  • e.g. olive oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

from the oven

Preheat the oven to 200°C (top/bottom heat). Carefully remove the tongues from the sea urchins and set aside. Halve or quarter the tomatoes, depending on their size. Cut the wolffish into bite-sized pieces. Chop the olives and cilantro. Place all ingredients, including the sea urchin tongues, in a baking dish and drizzle with olive oil. Bake in the oven for about 30 minutes.
