Ingredients for 4 servings:
- 1 bag of mashed potato powder
- 750 ml milk
- 1 liter vegetable broth
- 250 g soup vegetables, diced
- ½ stalk(s) leek, cut into rings
- 2 small onions, diced
- 5 potatoes, peeled and diced
- 1 kg bones (Kasseler meat bones) alternatively ribs or 500 g Kasseler comb
- salt and pepper
- 1 bunch parsley, finely chopped
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Wash the bones and simmer in the vegetable broth for 30 minutes. Then remove the bones and add the cleaned and finely chopped soup vegetables, onion, and leek to the broth and cook for another 15 minutes. Meanwhile, cook the diced potatoes in salted water until al dente. Drain and set aside. Now add the potato powder to the vegetable broth and bring to a boil. Thin with milk until the desired creamed potato consistency is reached. Season to taste, stir in the parsley and potato pieces, and serve.
