roasted onions
- 600 ml Gravy
- 100 g Roasted onions
- 2 tbsp Butter
- 100 ml White wine dry
- 1 tbsp Mustard
- 1 Sprig of thyme
- Salt
- Pepper
- 500 g Onions
- 10 tbsp Flour
- 2 tbsp Paprika powder
- Fat for deep-frying
Pasta
- 200 g Pasta flour
- 1 Egg
- 1 tsp Cooking oil
- 3 tbsp White wine
- 1 tsp Salt
- 3 tbsp Tomato paste

- 700 g Runner beans
- 10 disc Bacon
- 2 tbsp Clarified butter
- Salt
- Cook the hip steaks in a water bath at 58 degrees for about 2 hours.
- Meanwhile, for the sauce, sauté fried onions in butter and deglaze with white wine. Then let the white wine boil off completely and deglaze with the gravy. Finally add fresh thyme and a little salt and simmer gently for 10 minutes. Finally, season again with salt and pepper.
- After 2 hours, take the hip steaks out of the vacuum packaging and dab them thoroughly. To give the steaks a nice color, sear them briefly in a little oil or clarified butter.

- Peel the onions and cut into rings approx. 2 mm thick. Then mix the flour and paprika together and turn the onion rings in the flour mixture. Then shake off the flour well and fry the onion rings at 160 degrees until golden brown and then drain on kitchen paper. Lightly salt the finished onion rings and keep them warm in the oven.
Pasta
- Knead all the ingredients to a firm dough, wrap it in cling film and let it rest for 1 hour at room temperature. Then process the dough into ribbon noodles using a pasta machine or roll out the dough thinly with a rolling pin and cut into strips. Boil the fresh pasta in salted water for about 3 minutes.

- First clean the beans and cook in the sieve insert over steam for about 9 minutes until firm to the bite. Then quench the beans in ice water and let them cool. Wrap a slice of bacon around 6 beans and fry the beans in clarified butter and a little salt over low heat (with a lid).
