Ingredients for 1 servings:
- 200 ml milk, lukewarm
- 50 ml water, lukewarm
- 150 g sugar
- 1 packet of vanilla sugar
- 160 g butter, liquid but not too hot
- 3 eggs, room temperature
- 1 cube of fresh yeast or 2 packets of dry yeast
- 1 pinch of salt
- 1 kg flour
- 1 egg yolk
- 30 ml water
- n. B. Sugar granules
- n. B. almond flakes
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 40 minutes
First, dissolve the yeast in lukewarm water and set aside for five minutes. Then, knead the flour with the sugar, vanilla sugar, melted butter, salt, dissolved yeast, and eggs. Gradually add the lukewarm milk. Knead everything until a smooth dough forms. Cover and let the yeast dough rise for about 1.5 hours, until it has roughly doubled in volume. After this time, divide it into three equal pieces and roll them into logs without kneading them too much, as this will allow the air to escape. Then, braid the loaf (as in the video), place it on a baking sheet lined with baking paper, and shape it into a wreath. To give the yeast loaf a nice shine after baking, brush it with a mixture of egg yolk and water before baking. You can also sprinkle it with some granulated sugar and/or flaked almonds. It then needs to bake for about half an hour at 165 °C fan oven.
