Put the flour in a bowl and make a well in the center. Crumble the yeast and mix with the water and sugar. Pour the dissolved yeast into the well and knead into a pre-dough. Cover and let rise in a warm place for about 15 minutes. Add 1 teaspoon of oil and the salt, then knead everything into a smooth dough and let rise, covered, in a warm place for another 30 minutes. Preheat the oven to 160°C (fan oven). Spread a little flour on the work surface and roll out the dough into a 20 x 40 cm rectangle. Cut the ham into pieces and spread evenly on the dough along with the tomatoes and cheese. Sprinkle the herbs over the ham and roll the dough up lengthwise. Cut this roll into 12 pieces and arrange the snails on a baking sheet lined with baking paper. Bake in the oven on the middle rack for about 30 minutes.
