Potato balls from the oven

Ingredients for 6 servings:

  • 1,200 g potatoes
  • salt water
  • 6 eggs
  • salt and pepper
  • n. B. herbs
  • n. B. Spice(s) of your choice
  • 5 tbsp potato starch

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

without added oil, not fried and therefore particularly low in fat

Peel the potatoes, boil them in salted water until tender, and drain. Mash them using a hand mixer. Allow to cool slightly. Now add the eggs and season generously with salt, pepper, and any herbs and additional spices you like. Add the potato starch. The dough should no longer stick to your hands and should be easy to form into balls. Add a little more starch if needed. Place the balls on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C for about 45 minutes until crispy and brown. The balls make a delicious side dish or, with quark and a fresh salad, a good alternative to boiled potatoes. The dough can be varied as desired with herbs and spices.
