Yellow Squash Bake

Ingredients for 4 servings:

  • 1 kg pumpkin flesh, not too small diced
  • 2 onions, chopped
  • 1 cup(s) water
  • ½ tsp salt
  • 65 g butter
  • 2 eggs, whisked
  • 200 g cheese, shredded
  • 200 g crackers, e.g. Tuc, not too small crumbs
  • 1 handful of peanuts, chopped, if desired

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Simmer the pumpkin and onions in salted water for about 15 minutes. Stir in the remaining ingredients, pour everything into a shallow casserole dish, and bake in the oven at 200°C for about 30 minutes. I prefer yellow squash, which is small, orange, and has firm flesh. Regular Halloween pumpkins will also work.
