Ingredients for 6 servings:
- 300 g berries (currants, blackberries, blueberries)
- 250 g yogurt, 3.5%
- 250 g cream cheese
- 70 g sugar
- 200 ml apple juice
- 1 tbsp vanilla sugar
- 1 tbsp lime juice
- 8 g gelling powder, vegetarian for boiling or alternatively gelatin, 3 sheets
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 3 minutes; Total time approx. 1 hour 13 minutes
Peel and wash the berries. Purée 100g of them. Whisk together the yogurt, quark, sugar, vanilla sugar, and lime juice. Pour the apple juice into a saucepan and bring to a boil along with the gelling agent. If using gelatin, first soak it in cold water, then dissolve it completely in the apple juice. Stir the juice into the cream (if using gelatin, first stir a spoonful of the cream into the gelatin, then stir the mixture into the cream). Mix everything well and pour half of the cream into glasses. Add the puréed berries to the other cream and stir to combine. Then layer the fruit cream in the glasses. Chill the dessert for 1 hour. Finally, pour the whole berries into the glasses before serving.
