It turned out that beets have more nitrates than sausage. Meat processing technologist Pavel Agapkin said that the main vegetable of the borsch set – beets – contains 20 times more nitrates than sausage. Thus, beet has moved sausage in the ranking of the most harmful products for health.
Agapkin also added that frying beets produces nitrite from the nitrates, but they are not so harmful as to completely abandon the vegetable.
“Nitrates, which turn into nitrites, we eat every day in wild quantities. People have been eating these salads and Porsches for centuries, and nothing terrible happens to them,” said the expert.
However, people suffering from diabetes, gastritis, and hyperacidity should reduce their consumption of beets, as they contain a lot of sugar and chlorine.
