Young carrots from the pan

Ingredients for 2 servings:

  • 1 bunch carrot(s), organic with greens
  • 2 tbsp rapeseed oil
  • 1 package of diced ham (cubos de jamón)
  • 1 onion(s), red
  • 2 cloves garlic
  • 1 pinch of salt and pepper from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Remove the green parts from the carrots, peel them, and trim the ends. Peel and finely chop the onion and garlic, and set aside. Grate the carrots using a food processor to create thin slices. Heat the pan to level 9, add the oil, and reduce the heat to 4. Add the carrot slices and fry for about 15 minutes, then stir in the onion and garlic pieces and the ham cubes and fry for about 5 minutes. Briefly increase the heat to high and then turn off. This will keep the carrots firm. Finally, season with sea salt and freshly ground pepper. What you want to serve with it is up to the cook. We had it with fried eggs and rye crispbread.
