Ingredients for 4 servings:

  • 500 g pasta
  • 100 g Tyrolean Zigerkäse
  • 150 g Tyrolean grey cheese
  • 150 g Emmental cheese
  • ⅛ liter milk
  • 250 ml cream
  • Parsley
  • butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Salt the water and bring it to a boil, then add the pasta. Keep the water to a minimum; the pasta should only just cover. Crumble the cheese into the boiling water and cook the pasta until al dente. Stir in the remaining cheese and milk, and season to taste. Serve on a plate and drizzle with melted butter, cream, and parsley. Of course, there are also “low-calorie versions,” but you’ll definitely lose some of the flavor. Don’t forget, Tyrolean cuisine was intended for hard-working peasants.
