Ingredients for 4 servings:

  • 200 g chickpeas, dry
  • 3 onions and lots of garlic
  • 5 tbsp breadcrumbs
  • some lemon juice
  • 1 kg tomatoes
  • lots of sheep’s cheese
  • 10 olives
  • Oregano and thyme
  • salt and pepper
  • oil

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

Soak the chickpeas overnight. Drain the next day and cook for about 30-40 minutes. Sauté the onion and garlic. Drain all the peas and mix with the onion, garlic, breadcrumbs, lemon juice, salt, and pepper. Grease the dish. Pour the mixture into a large, shallow baking dish. Slice the tomatoes and arrange them on top like scales. Crumble the feta cheese and sprinkle over the tomatoes. Season with thyme and oregano. Drizzle with oil and bake for about 30 minutes at 200°C. Turn off the heat and leave in the oven for about 5 minutes. Add the olives during these 5 minutes. This is great for making ahead and is also suitable for guests.
