Ingredients for 4 servings:
- 500 g pasta, of your choice
- 2 tbsp olive oil
- 1 garlic clove(s), chopped
- 3 m.-large zucchini, finely diced
- ½ cup milk
- 120 g cream cheese
- ½ bunch basil, chopped
- salt and pepper
- possibly Parmesan
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
light vegetarian sauce
Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions. Heat the oil in a pan over medium heat. Stir in the garlic and sauté for 2 minutes. Add the zucchini and cook for 10 minutes, until some of the moisture has evaporated. Pour the milk into the pan, add the cream cheese, and stir until melted. Season with salt and pepper. Add the basil. Pour the sauce over the cooked pasta and serve with grated Parmesan cheese, if desired.
