Zucchini and lemon noodles

Ingredients for 4 servings:

  • 500 g macaroni
  • 500 g zucchini
  • 2 tbsp olive oil, alternatively lemon oil
  • 1 lemon(s), untreated, juice and grated zest
  • 150 g Parmesan or Pecorino, grated
  • 2 clove(s) garlic, chopped or squeezed
  • 1 bunch of parsley
  • salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cook the pasta according to the package instructions until al dente. Cut the zucchini into long, thin strips, about 2 cm wide, and fry in a large pan in heated oil until browned. Add the grated lemon zest, chopped or crushed garlic, and chopped parsley, and continue frying briefly. Mix the drained pasta with the zucchini. Stir in the Parmesan or Pecorino cheese and season with salt, pepper, and lemon juice. Serve immediately.
