Zucchini and minced meat stew

Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 2 onions
  • 1 large zucchini
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp chili powder
  • 750 ml milk
  • 500 g rice
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the onions, and fry in hot oil in a large pan until golden brown. Add the minced meat and fry together. Wash the zucchini and slice it unpeeled. If the zucchini is too large, cut the slices in half again to form a half-moon. Add the zucchini to the frying pan with the minced meat and onions and simmer for about 10 minutes. Season with the spices mentioned above, stirring frequently. Now add the milk and simmer for another 20 minutes, until the zucchini is soft. Meanwhile, cook the rice in 1 liter of water in a saucepan according to the package instructions. Empty the cooked rice into a cup and arrange it in the center of the plate, forming a nice shape. Arrange the zucchini and minced meat sauce around the outside. Serve hot.
