Zucchini and mushroom sauce

Ingredients for 3 servings:

  • 1 pack of feta cheese, approx. 200 g
  • salt and pepper
  • Paprika powder
  • n. B. Thyme, fresh
  • e.g. rosemary, fresh
  • 1 zucchini
  • 250 g mushrooms
  • 1 onion(s)
  • 100 ml vegetable stock
  • 1 cup of cream

Instructions

Working time approx. 7 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 14 minutes

Cut the feta cheese into six pieces, then sprinkle with salt, pepper, and paprika. Arrange the thyme and rosemary on top. Then dice the zucchini, slice the mushrooms, and dice the onion. Sauté everything in a pan and, after about 2-3 minutes, add the vegetable stock. Once most of the vegetable stock has evaporated, add the cream and mix well. Add the marinated feta cheese to the pan and simmer over low heat for 4 minutes. Remove the herbs, crush the feta cheese, and stir it into the sauce. Serve with pasta or rice of your choice.
