Zucchini and sweet potato patties

Ingredients for 3 servings:

  • 2 m.-large zucchini
  • 250 g sweet potatoes
  • 1 ½ m.-sized onion(s)
  • 2 m.-sized eggs
  • 2 tbsp parsley, chopped
  • 70 g flour
  • 30 g cornstarch
  • salt and pepper
  • Nutmeg, freshly grated
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the sweet potatoes and then coarsely grate them along with the zucchini. Peel the onion, halve it, and slice it into thin strips. Wash the parsley, pat it dry, and chop it. Combine the grated potatoes and zucchini, eggs, parsley, flour, and cornstarch, and season generously with nutmeg, pepper, and salt. Fry three portions at a time in a pan. Remove from the pan and drain on kitchen paper. Delicious as a starter or main course with smoked salmon and a herb dip.
