Zucchini and tomato gratin

Ingredients for 4 servings:

  • 300 g zucchini, small
  • 500 g tomatoes, ripe
  • 500 g potatoes
  • 2 onions
  • 2 garlic cloves
  • 1 pinch of sea salt
  • 1 pinch(s) of pepper
  • 6 sprig(s) thyme or savory
  • 8 olives, black
  • 6 tbsp olive oil
  • 60 ml vegetable stock

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

simple French classic

Wash and trim the zucchini and tomatoes, then slice them very thinly. Peel the potatoes, onions, and garlic, and slice them very thinly. Grease a baking dish with oil and layer the vegetables, seasoning with sea salt and pepper. Preheat the oven to 200 degrees Celsius (top/bottom heat). Wash and finely chop the herbs, sprinkle them over the vegetables along with the olives. Mix the oil with the broth and pour over the vegetables. Bake the gratin on the middle rack at 180 degrees Celsius (fan oven) for about 60 minutes, until the vegetables are tender. Serve with a delicious baguette and a nice French red wine, and you’ve got the perfect romantic French evening!
