Zucchini-Apple Chutney

Ingredients for 1 servings:

  • 500 g zucchini
  • 500 g apples, sour
  • 4 garlic cloves
  • 1 red chili pepper(s)
  • Salt
  • 3 tbsp brown cane sugar
  • 1 tsp cumin, ground
  • 1 tbsp ginger, chopped
  • 100 ml vinegar, mild

Working time approx. 30 minutes; Total time approx. 30 minutes

Fresh, spicy chutney, goes well with meat

Peel and core the apples. Peel and core any large zucchini and remove the seeds. Finely dice the apples, zucchini, garlic, chili (without seeds!), and ginger. Combine everything in a saucepan with the sugar, spices, and vinegar, stir, and bring to a boil. Reduce heat to very low for about 60 minutes, stirring regularly to prevent sticking. Pour into jars while still hot and seal immediately. Shelf life: about 1 year.
