Zucchini cake with nuts

Ingredients for 1 servings:

  • 4 eggs
  • 400 g flour
  • 400 g sugar
  • 250 g oil
  • 200 g hazelnuts, ground
  • 500 g zucchini, grated
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 packet of vanilla sugar
  • Chocolate glaze

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C (top/bottom heat) or 180°C (fan oven). First, beat the eggs with the sugar until frothy, then add the oil. Then, combine the flour with the baking powder, baking soda, and cinnamon, and fold in the mixture along with the grated zucchini and nuts. Pour the batter onto a baking sheet lined with baking paper. Bake in the preheated oven for about 30 minutes. Once cooled, cover with chocolate glaze. If desired, add 100g of grated chocolate to the mixture or replace the vanilla sugar with orange zest.
