Zucchini cream soup with salmon

Ingredients for 4 servings:

  • 4 m.-large zucchini
  • 2 onions
  • 500 ml vegetable stock
  • 1 cup sour cream
  • 1 clove(s) garlic, quartered
  • 200 g smoked salmon
  • 1 shot of white wine

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the zucchini and onions and simmer with the garlic in the vegetable broth for a quarter of an hour. Blend with a hand blender, add the sour cream and white wine, and stir in. Finely chop the smoked salmon, place it on plates, and pour the soup over it.
