Ingredients for 4 servings:

  • 2 m.-large zucchini
  • 3 tbsp almonds, ground
  • 12 tbsp oil
  • 2 garlic cloves
  • 1 bunch arugula
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

very tasty as a spread or as a dip for grilling

Dice the zucchini and fry in 2 tablespoons of oil. Chop the garlic and add it, frying briefly. Let cool slightly. Puree the zucchini with the remaining oil and the almonds. Season with salt and pepper. Finely chop the arugula and fold in.
