Zucchini fans with feta

Ingredients for 2 servings:

  • 2 small zucchini, about 15 cm long
  • 125 g feta cheese
  • 1 tbsp herbs de Provence
  • 3 tbsp olive oil
  • 1 garlic clove(s)
  • 6 small cherry tomatoes
  • some olives, black
  • 2 small spring onions
  • Salt and pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

A quick dish that is also suitable as a starter.

Wash and trim the zucchini, but leave the stem end undone. Cut the zucchini lengthwise three times, almost to the stem end. Cut the feta cheese into long strips and place them between the zucchini cuts. Peel the garlic and cut into wafer-thin slices. Mix with the herbs, 2 tablespoons of olive oil, and freshly ground pepper, and brush the zucchini wedges with the garlic. Cover and let marinate for 30 minutes. Slice the spring onions diagonally into 2 cm long pieces. Place the zucchini wedges in a baking dish and sprinkle with salt. Add the tomatoes, spring onions, olives, and the remaining oil to the baking dish and bake everything in a preheated oven at 180°C (350°F) for about 20 minutes.
