Ingredients for 4 servings:

  • 600 g zucchini
  • 1 onion(s)
  • 200 g oat flakes
  • 2 eggs
  • 70 g cheese
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Finely chop the zucchini, onion, and cheese and blend with the remaining ingredients using a hand blender. If you don’t have a hand blender, you can grate the cheese and zucchini and mix with the remaining ingredients. Place a tablespoon-sized amount of the mixture on a baking sheet lined with baking paper, press down lightly, and bake for 30 minutes at 180 degrees Celsius (350 degrees Fahrenheit). The zucchini fritters don’t need to be turned. If you like, you can fry the oven-baked zucchini fritters in a pan with a little oil for an additional 2-3 minutes on each side. This intensifies the roasted flavor. This recipe yields approximately 22 zucchini fritters. Serve with mashed potatoes and a fresh salad.
