Zucchini muffins with feta cheese

Ingredients for 12 servings:

  • 1 zucchini
  • 375 g flour (wheat flour)
  • 1 tbsp baking powder
  • 1 tsp salt
  • pepper
  • 150 g feta cheese, crumbled
  • 2 eggs
  • 250 ml milk
  • 80 ml oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean, wash, and coarsely grate the zucchini. Combine the flour, baking powder, salt, and pepper in a bowl. Add the grated zucchini and feta cheese and mix to combine. Make a well in the center. Combine the eggs with the milk and oil and pour into the well. Quickly mix everything with a fork until a batter forms. It should still be slightly lumpy. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Pour the batter into a greased and floured muffin tin and bake for about 25-30 minutes until golden brown. Let the muffins cool in the tin for 5 minutes, then remove them from the pan. They taste best when served lukewarm.
