Zucchini noodles with tofu and fried onions

Ingredients for 4 servings:

  • 1 kg zucchini
  • 350 g smoked tofu
  • 20 g ginger root
  • 2 garlic cloves
  • 3 tbsp oil
  • 2 tbsp sesame seeds
  • 3 onions
  • 1 lime(s), the juice
  • salt and pepper
  • Soy sauce

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash and trim the zucchini, and trim the ends. Then, using a spiralizer/julienne cutter, cut the zucchini into long, thin strips to create spaghetti. Set aside. Peel and slice the onions. Sauté in a large pan with a little oil until golden brown. Meanwhile, peel and finely chop the ginger and garlic. Roughly crumble the tofu or cut into small cubes. You can either use a new pan or add the tofu to the onions and fry for about 2 minutes, stirring occasionally. Add the ginger, garlic, and sesame seeds and fry for another 3 minutes. Season with soy sauce. Remove the tofu and onion mix from the pan and keep warm. Wipe the pan with a paper towel and heat a little oil in it. Sauté the zucchini noodles for about 3 minutes, stirring occasionally, until al dente. Season with salt, pepper, and lime juice. Serve the noodles with the tofu mix and top with the fried onions.
