Zucchini pan with soy mince

Ingredients for 2 servings:

  • olive oil
  • 1 tbsp plum jam
  • 2 m.-sized onion(s)
  • 2 garlic cloves
  • 2 m.-large zucchini
  • 500 ml vegetable stock
  • 100 g soy granules
  • Soy sauce, or salt
  • white wine
  • pepper
  • Thyme

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Soak the soy granules in hot vegetable stock for about 10 minutes. Then, fry the onions and plum jam in plenty of olive oil in a large pan. Add the chopped garlic cloves and fry briefly again. Strain the soy granules (reserving the vegetable stock) and add them like minced meat, frying until lightly browned. Then add the zucchini cubes and thyme and fry briefly. Then add the vegetable stock to the pan. Add soy sauce and white wine to taste and season with pepper. Simmer until the zucchini is soft but still crunchy.
