Zucchini pasta with smoked salmon and spinach sauce

Ingredients for 4 servings:

  • 2 zucchini, approx. 400 g
  • Salt
  • 1 tbsp olive oil
  • 4 tbsp onion(s), finely chopped
  • 1 garlic clove(s), squeezed
  • 200 g fresh leaf spinach
  • 500 g smoked salmon, chopped
  • 200 ml cream
  • 110 ml milk
  • 2 tbsp lemon juice, fresh
  • salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

For the zucchini pasta, halve the zucchini and then slice it lengthwise using a cheese slicer or mandolin. Season the slices with a little salt and set them aside. For the spinach and salmon sauce, heat the olive oil in a pan over medium heat. Sauté the onions and garlic until both are soft. Add the spinach and salmon and cook for 1-2 minutes, until the spinach is tender. Then add the cream and milk. Simmer for another 5-6 minutes. Season with lemon, salt, and pepper. Serve the warm sauce on top of the crunchy zucchini pasta. Nutritional information: 28 g protein, 10 g carbohydrates, 32 g fat, 440 kcal per serving.
