Zucchini pie

Ingredients for 2 servings:

  • 800 g zucchini
  • 1 tbsp salt
  • 2 tbsp oil
  • 3 large eggs
  • 4 tbsp cream, or 3.5% milk
  • 150 g cheese, grated
  • 1 medium-sized onion(s), finely diced
  • pepper
  • oregano
  • Butter, for the mold

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 10 minutes

Wash the zucchini, coarsely grate it, and place it in a bowl with salt, then let it stand for 15 minutes. Squeeze the grated zucchini into a sieve and return it to the bowl. Mix with the oil, diced onion, beaten eggs, cream, and 2/3 of the cheese. Season with freshly ground pepper and oregano. Grease a quiche dish or casserole dish with butter/margarine and add the zucchini mixture, smoothing the surface. Sprinkle the remaining cheese over the top. Bake in a preheated oven at 200°C for about 35 minutes, until the pie is golden brown. The pie tastes great hot or cold. Tip: You can add other ingredients such as grated raw potatoes and/or diced ham.
