Zucchini rice pot

Ingredients for 4 servings:

  • 500 g zucchini
  • 250 g mixed minced meat
  • 250 g rice
  • 1 large onion(s)
  • 2 tbsp oil
  • 1 clove(s) garlic
  • ½ liter vegetable broth or beef broth
  • 1 tsp lemon juice
  • some salt and pepper
  • possibly parsley, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the zucchini and cut into strips. Chop the onion and garlic, fry in oil, add the minced meat, and fry with the rice. Pour in the broth, add the zucchini, and season. Simmer over low heat for about 20 minutes until tender. Garnish with chopped parsley before serving, if desired. Serve with a crisp salad.
