Zucchini salad

Ingredients for 4 servings:

  • 500 g zucchini
  • 3 tbsp olive oil
  • 2 cloves garlic
  • salt and pepper
  • 1 half lemon(s), the juice
  • 8 cherry tomatoes
  • 200 g smoked pork cold cuts
  • 50 g olives, black, pitted

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and trim the zucchini and cut into approximately 3 mm thin slices. Heat olive oil and sauté the crushed garlic cloves. Add the zucchini, season with salt and pepper, and sauté for about 4 minutes. Then drizzle with lemon juice. Wash and quarter the tomatoes, cut the smoked pork into strips, and add to the salad along with the olives.
