Ingredients for 1 servings:

  • 10 cup(s) zucchini, grated
  • 4 cup(s) onion(s), grated
  • 3 peppers, grated, red or mixed
  • 5 tsp salt
  • 2 cups sugar
  • ½ tsp pepper
  • 2 ½ cups vinegar
  • 2 tsp celery salt

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 5 minutes; Total time approx. 1 day 35 minutes

for 20 glasses of 220 ml each

Mix all ingredients in a bowl and let it steep overnight. The next day, bring everything to a boil for 3-5 minutes, depending on the desired chewiness. While still hot, pour the mixture into jars (keep jars and lids sterilized) and immediately seal with screw caps.
