Indian watermelon curry

Ingredients for 4 servings:

  • 1 melon(s) (watermelon), seedless
  • 1 ½ tsp chili powder
  • 0.2 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp garlic, crushed
  • 2 tbsp oil
  • 1 tsp cumin
  • Salt
  • Sugar, to taste
  • 2 tbsp lemon juice

Matira Curry

Cut the watermelon into large pieces (approx. 3×3 cm). Purée half of the pieces in a tall bowl. Add the turmeric, chili, coriander, garlic, and salt to the purée and stir to combine. Heat the oil in a wok and add the cumin seeds. After 15-20 seconds, add the melon purée and simmer over low heat for a while. Then increase the heat and reduce by about 1/3. Add the sugar, stir to combine, then the lemon juice, mix, and simmer for 1 minute. Add the remaining melon pieces to the seasoned melon purée and simmer over low heat for a few minutes. Gently mix the melon pieces with the sauce to coat them all. This serves 4 as a side dish. It tastes great with roasted meat or as a main course with rice, but this amount is only enough for 2-3 people.
