Zucchini soup with couscous and grated cheese

Ingredients for 4 servings:

  • 1 large zucchini
  • 1 large onion(s)
  • 2 large potatoes, peeled
  • 1 ½ tsp vegetable broth, instant
  • 400 ml water
  • 1 ½ tsp salt
  • 100 g grated cheese, e.g. Gouda
  • 100 g couscous
  • n. B. Water, according to package instructions
  • some vegetable broth, instant
  • some butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Chop the zucchini, potatoes, and onions into small pieces and place them in a saucepan with the broth and salt. Add 400 ml of water and bring to a boil, then simmer for about 15-20 minutes, then puree. Meanwhile, prepare the couscous with a little broth in another saucepan according to the instructions, then add a small knob of butter. Divide everything among 4 plates and sprinkle with grated cheese.
