Ingredients for 6 servings:
- 1 pack of puff pastry, round, 30 cm
- 500 g zucchini, coarsely grated
- 2 shallots, finely chopped
- 1 bell pepper(s), (spot pepper), cut into fine strips
- 2 eggs
- 125 ml crème fraîche
- 100 g cheese (Gruyère), grated
- 50 g Parmesan, grated
- 3 tbsp olive oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Simple, light starter – minimal effort
Add a little salt to the grated zucchini and let it draw water for about 15 minutes, then squeeze out any excess water. Lightly fry the shallots in oil, add the zucchini and bell pepper, and sauté everything for 10-15 minutes, then let it cool. Crack the eggs and mix with the crème fraîche. Fold in the Gruyère and the zucchini mixture. Season with salt and pepper. Preheat the oven to 180°C (350°F). Place the puff pastry in a dish and prick with a fork. Spread the zucchini mixture on top and sprinkle with Parmesan cheese. Bake on the middle rack of the oven for about 30 minutes. Serve warm or lukewarm.
