Ingredients for 4 servings:

  • 1 pack of shortcrust or puff pastry
  • 1 tbsp tomato paste
  • 1 eggplant(s)
  • ½ onion(s)
  • 4 garlic cloves
  • 1 ball of mozzarella
  • Thyme
  • salt and pepper
  • some olive oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Slice the eggplant, season with salt, and let it soak for about an hour, then pat dry. Chop the onion and slice the mozzarella. Place the dough in a quiche dish, spread with tomato paste, and season generously with a crushed garlic clove, thyme, salt, and pepper. Layer the eggplant slices on top, season with garlic, salt, pepper, and thyme, sprinkle with the onions, and top with the mozzarella slices. If you haven’t used all of the eggplant, add another layer, finishing with mozzarella. Drizzle with olive oil and bake in a preheated oven at 180°C for about 40 minutes. Serve with salad. Also delicious with feta or Parmesan cheese.
