Zucchini, tomato, and feta pasta

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 4 m.-sized tomatoes
  • 250 g pasta
  • salt water
  • 100 g feta cheese
  • salt and pepper
  • 1 small bunch of fresh basil
  • 1 m.-sized onion(s)
  • e.g. olive oil

First, chop the onion into small pieces and fry them in a pan with a little olive oil. Meanwhile, chop the zucchini into small pieces. Once the onions are translucent, add the zucchini to the pan and fry. Peel the tomatoes. To do this, make an X-shaped cut in both the top and bottom of the tomatoes, place them in hot water, and let them sit for a few minutes. Then you can easily remove the skin from the tomatoes. Cut the tomatoes into small pieces and add them to the pan with the zucchini. Once the tomatoes are in the pan, cook the pasta in salted water according to the package instructions. Simmer the tomatoes in the pan over medium heat until a sauce forms. Cut the feta cheese into small cubes and add to the pan. Once the feta cubes are in the pan, reduce the heat to low. Season everything with salt, pepper, and the finely chopped basil. Drain the cooked pasta, add it to the pan, mix everything together well, and serve.
