Zucchini with feta, apple and tangerines

Ingredients for 2 servings:

  • 2 zucchinis
  • 2 cloves garlic
  • 2 tangerines
  • 1 m.-sized apple
  • 100 g feta cheese
  • 1 tsp chili flakes
  • 1 tbsp basil, dried or fresh
  • 5 tbsp olive oil
  • Pepper, from the mill
  • Salt
  • tbsp balsamic vinegar, white

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Quick vegetarian food

Cut the zucchini into approximately 2×2 cm cubes, along with the apple. Peel and finely chop the garlic. Briefly fry everything in oil. Meanwhile, peel the mandarin oranges and dice or crumble the feta. Lightly salt and pepper the apple and zucchini pan, sprinkle with chili flakes and basil (add strips of fresh basil at the end). Fold in the mandarin oranges, sprinkle with the feta, and season with a little balsamic vinegar. Serve with French white bread.
