Zucchini with salmon and feta

Ingredients for 2 servings:

  • 3 small zucchini
  • 250 g salmon fillet(s)
  • 100 g feta cheese
  • 1 large onion(s)
  • 1 tbsp tomato paste
  • 1 tbsp oil
  • salt and pepper
  • n. B. basil leaves
  • 1 rosemary sprig(s)
  • 2 sage leaves
  • 1 sprig(s) of thyme

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash the zucchini and spiralize it with a spiralizer (zoodles are also an option, of course). Peel and roughly chop the onion. Wash and finely dice the salmon. Sauté the onions in oil until translucent. Add the tomato paste and sauté. Then add the salmon and sear. Shortly afterward, add the zucchini spirals. Season everything with salt and pepper, and garnish with the finely chopped herbs. While everything is in the pan for about 5-10 minutes, dice the feta. When the zucchini is almost cooked to your liking (try it!), add the cheese and let it melt slightly.
