Ingredients for 2 servings:
- 2 slice(s) bread(s) (mixed bread), not too thinly sliced
- 2 thick pork steaks (ridge steaks)
- 2 medium-sized onions, cut into half rings
- 2 large eggs
- 2 tbsp oil
- 1 tbsp, heaped butter
- 2 tsp mustard
- salt and pepper
- Paprika powder, sweet
- Garlic granules
- Rosemary, ground
- Oregano, ground
- e.g. mustard pickle(s)
- e.g. pepper(s), pickled
Instructions
Working time approx. 15 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 45 minutes

Pound the steaks, sprinkle with the spices, and layer with half onion rings. Wrap in foil and refrigerate for 24 hours. For each serving, spread a thin layer of butter and mustard on one slice of black bread. Fry the steaks in oil and keep warm. Fry the onion rings in the same pan and keep warm. Wipe the pan with kitchen paper and fry the eggs in butter into fried eggs. Place the steaks on the bread, arrange the onion rings on top, and place a fried egg on top of each one. Lightly salt the fried eggs and sprinkle with paprika. Garnish the plates with mustard gherkins and pickled peppers, if desired.
