Cheese – sesame – crackers

Ingredients for 1 servings:

  • 2 eggs
  • 120 g butter, soft
  • ½ tsp salt
  • ½ tsp cayenne pepper
  • 100 g wheat flour
  • 100 g flour (buckwheat flour)
  • 200 g mountain cheese, strong
  • 100 g sesame seeds
  • Flour for the work surface

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Whisk together the eggs, softened butter, and spices. Toast the sesame seeds in a pan until fragrant, then add them to the egg mixture along with the finely grated cheese. Then fold in the flour and quickly knead into a dough. Let it rest in the refrigerator for 20 minutes. Roll out on a floured board to a thickness of about 2 mm (important, otherwise it won’t be crispy!). Cut or roll out squares, triangles, stars, etc. from the dough and bake at 170°C in a preheated oven for about 10 minutes until crispy and golden. Don’t pack them too tightly, or they’ll stick together.
