Ingredients for 1 servings:

  • 400 g apples (Boskoop)
  • 1 organic lemon(s), zest
  • 500 g low-fat curd cheese
  • 1 pack of cream cheese, natural
  • 5 eggs, separated
  • 50 g soft wheat semolina
  • 200 g sugar
  • 100 g almonds, chopped
  • n. B. Butter and flour for the mold

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 50 minutes; Total time approx. 3 hours 15 minutes

quick and easy

Peel, core, quarter, and dice the apples. Whisk together the quark, cream cheese, egg yolks, semolina, lemon zest, and 50g of sugar. Fold in the apples and almonds. Butter and flour a 26cm springform pan and spread the mixture into it. Bake in a preheated oven at 200°C (top/bottom heat) for 30 minutes. Meanwhile, beat the egg whites with 150g of sugar until stiff. This may take a while, so don’t lose patience. Spread the egg white mixture over the cake and bake for another 20 minutes. Let it cool completely.
